Chef Tom Doran

Founder & Executive Chef: Chef Tom Doran Tom Doran’s journey to Mangia Pizza began right here in Rockland County. A proud graduate of Clarkstown South and Rockland BOCES in 1994, he sharpened his culinary skills at the prestigious Culinary Institute of America, graduating in 1996. After gaining experience in local kitchens, Tom expanded his horizons, traveling through Europe as a chef in 2003 and absorbing the flavors, techniques, and traditions that continue to inspire his cooking today.

Though he stepped away from the kitchen for a time to work in the family’s NYC painting business, Tom’s passion for pizza never faded. When the pandemic offered a moment of reflection, he returned to his culinary roots, purchasing Valley Pizza in Valley Cottage in 2020, then expanding with Napoli’s Pizza in 2021. Now, in 2025, Tom brings his signature style and dedication to Mangia Pizza & Restaurant in New City.

For Tom, it’s all about feeding the community — with quality, consistency, and heart in every slice.

Hon. Scott B. Ugell (Ret.)

Co-Owner & Community Partner: Hon. Scott B. Ugell (Ret.) Born and raised in Bensonhurst, Brooklyn — where pizza is more than just food, it’s a way of life — Scott Ugell has always had a deep connection to great cuisine. A lifelong foodie, Scott spent 32 years serving as a Clarkstown Town Justice, where his warm and approachable demeanor often included courtroom conversations about food that helped put people at ease.

After retiring from the bench, Scott was ready for a new chapter — one rooted not in law, but in love: love for food, community, and connection. Inspired by his personal health journey, he’s also passionate about creating inclusive, health-conscious dining options. At Mangia Pizza, Scott works alongside Chef Tom Doran to blend tradition with innovation, ensuring that every guest — whether gluten-free, health-minded, or classic pizza-lover — finds something to enjoy.

Scott remains committed to supporting Clarkstown’s small businesses and believes deeply in the people, neighborhoods, and bright future of North New City.
